Et cela vaut aussi pour la cuisine. Mais l\u2019hiver long et rude que conna\u00eet la province a longtemps limit\u00e9 la vari\u00e9t\u00e9 dans l\u2019assiette. Les rago\u00fbts, mijot\u00e9s et autres plats chauds, h\u00e9rit\u00e9s de l\u2019immigration irlandaise et \u00e9cossaise, ont en effet \u00e9t\u00e9 tr\u00e8s pr\u00e9sents au menu.<\/span><\/p><p><span style=\"font-weight: 400;\">Quelques personnes viennent marquer la culture culinaire, comme Jehane Beno\u00eet au 20e\u00a0si\u00e8cle. L\u2019influence du voisin du Sud, amen\u00e9e notamment par la t\u00e9l\u00e9vision, s\u2019installe dans les cuisines. Les plats pr\u00e9par\u00e9s et les aliments transform\u00e9s garnissent progressivement les tables, d\u2019autant que les femmes vont d\u00e9sormais travailler et passent moins de temps aux fourneaux. Cette identit\u00e9 qu\u00e9b\u00e9coise s\u2019appuie certes sur des techniques fran\u00e7aises, mais elle a su se d\u00e9faire de la rigidit\u00e9 qui caract\u00e9rise parfois la gastronomie d\u2019outre-Atlantique. Les chefs locaux osent, cr\u00e9ent, innovent\u00a0: tout est \u00e0 faire, et il n\u2019y a pas de tradition \u00e0 respecter.<\/span><\/p><p style=\"font-weight: 400;\"><span>L\u2019identit\u00e9 culinaire qu\u00e9b\u00e9coise se dessine donc sur ses bases historiques fran\u00e7aise et anglaise, sur ses produits locaux, mais aussi au travers de la red\u00e9couverte des racines autochtones, dans ses fa\u00e7ons de faire comme dans ses ingr\u00e9dients. On voit d\u00e9sormais des aliments s\u00e9ch\u00e9s ou fum\u00e9s selon des techniques des Premi\u00e8res Nations, tandis que les <strong><a href=\"https:\/\/immigrantquebec.com\/fr\/conseils-d-experts\/terroir-6-aliments-quebecois-a-re-decouvrir-pour-les-fetes\/\" target=\"_blank\" rel=\"noopener\">produits bor\u00e9aux<\/a><\/strong> (th\u00e9 du Labrador, argouse, etc.) trouvent leur place dans les recettes.<\/span><span>\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Le Qu\u00e9bec d\u2019antan n\u2019a pas disparu pour autant\u00a0: les Qu\u00e9b\u00e9cois restent ainsi tr\u00e8s attach\u00e9s aux casse-cro\u00fbtes traditionnels, ces petits restaurants qui servent des patates en bord de route, tandis que des chefs comme Martin Picard, du <em>Pied de cochon<\/em>, proposent de la poutine dans leurs menus et remettent les plats de la cabane \u00e0 sucre au go\u00fbt du jour. Plus r\u00e9cemment, la capitale nationale fait aussi parler d\u2019elle avec de nouveaux restaurants qui se d\u00e9marquent, \u00e0 l\u2019image de <i>Melba<\/i> ou de <i>Saisons<\/i>.<\/span><\/p><p style=\"font-weight: 400;\"><span>C\u2019est d\u2019ailleurs dans le Vieux-Qu\u00e9bec qu\u2019on trouve <em>Tani\u00e8re\u00a03<\/em>, le seul restaurant de la province doublement \u00e9toil\u00e9 par le Guide Michelin \u2014 et le deuxi\u00e8me du Canada. \u00c0 cette table, chaque service est inspir\u00e9 de l\u2019histoire du territoire, les produits locaux sont magnifi\u00e9s dans l\u2019assiette et le tout est servi avec une \u00e9l\u00e9gance digne des plus grands \u00e9tablissements \u00e0 nappes blanches. C\u2019est au printemps dernier que le c\u00e9l\u00e8bre guide gastronomique est arriv\u00e9 au Qu\u00e9bec\u00a0: en plus de <em>Tani\u00e8re\u00a03<\/em>, il a \u00e9galement d\u00e9cern\u00e9 huit \u00e9toiles \u00e0 d\u2019autres \u00e9tablissements des grandes villes, mais aussi en r\u00e9gion.<\/span><\/p><p style=\"font-weight: 400;\"><span>En septembre, les talents culinaires d\u2019ici se faisaient de nouveau remarquer au North America\u2019s\u00a050 Best, alors que l\u2019organisme d\u00e9voilait sa premi\u00e8re liste d\u00e9di\u00e9e exclusivement aux \u00e9tablissements d\u2019Am\u00e9rique du Nord. <em>Mon Lapin<\/em>, \u00e0 Montr\u00e9al, d\u00e9crochait la 2e\u00a0place avec le titre de Meilleur restaurant de l\u2019Est du Canada, tandis que <em>Tani\u00e8re\u00a03<\/em> arrivait \u00e0 la 5e\u00a0place avec le prix sp\u00e9cial Art of Hospitality.
